Duties:
Administration:
- Keep control of the order from delivery, to issuing to different departments
- Have up to date knowledge on price increases from approved suppliers
- Complete the order sheets and query all irregularities on the prices
- Always be available to help with stock taking measures and assist in the capturing of it
- Keeping cleaning rosters, time sheets, order sheets and maintenance rosters are up to date and implemented
- Have detailed documents on opening and closing procedures of the kitchens
- To contribute and be involved in HOD meetings and daily handovers
- Carry out instructions given by management and Head Office
Quality & Presentation
- Maintain food quality and presentation standards set by General Manager and Executive Chef
- To assist in the preparation and service of high-quality food and take responsibility for the food
- To monitor the quality of the stock delivered by suppliers from the point of delivery to point of consumption
- To ensure food is prepared timeously
Reporting / Communication
- Communicate a detailed handover to the head chef on a daily basis
- Report necessary problems and shortages to the Duty Manager, Head Chef or GM
- Keep track of:
- What needs to be ordered
- What has been ordered to ensure that there are no stock irregularities
- Liaise with group food custodian on all new ideas and suggestions
Cleaning & Maintenance:
- Ensure that all HACCP standards are maintained
- Ensure that the kitchen equipment is clean and in working order at all times
- Maintain the tidiness of the store rooms, fridges and freezers
- Make sure that the kitchen is kept in a hygienic, clean and orderly state
- Set up and implement a cleaning schedule
- Ensure the Facilities File is up to date and being correctly implemented
Financial:
- To ensure minimum wastage of raw and cooked materials
- To ensure maximum food quality to eliminate complaints resulting in discounts
- Eliminate wastage by monitoring the freshness of all produce in the fridge, and communicate it through the Executive Chef, Duty Manager or GM
- Keep up to date with current promotions and new products
Human Resources:
- Keep staff personal information up to date in their files
- Make sure all the Company’s rules and regulations are implemented at all times throughout the kitchen
- To ensure that all staffing issues are dealt with in the correct manner, and in coherence with the Executive Chef, Duty Manager or GM
- Maintain staffing levels
Discipline:
- Correct disciplinary procedures and actions to be enforced at all times
- Assist the Head Chef, Financial accountant and the general manager with administrative work relating to the disciplinary problems as needed
- To maintain the status quo in the kitchen environment thus assisting to eliminate uncalled for disciplinary problems
- Supervise the quality of food, work procedure in the head chef’s absence
Salary:
- R 20 000 – R 30 000 (Negotiable, dependent on experience)

Candidate Requirements
Requirements:
- Grade 12
- Relevant culinary qualification
- At least 5 – 7 years in the culinary field
- You are expected to always be available telephonically and always have access to read and respond to your emails
